{"id":92,"date":"2026-08-11T22:51:17","date_gmt":"2026-08-11T22:51:17","guid":{"rendered":"https:\/\/granary.food\/?p=92"},"modified":"2026-08-11T22:51:17","modified_gmt":"2026-08-11T22:51:17","slug":"whole-roasted-brill-with-crab-leeks-and-peas","status":"publish","type":"post","link":"https:\/\/granary.food\/?p=92","title":{"rendered":"Whole roasted brill with crab, leeks and peas"},"content":{"rendered":"\n<p class=\"is-style-text-subtitle is-style-text-subtitle--1 wp-block-paragraph\">Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 whole brill, gutted and trimmed<\/li>\n\n\n\n<li>2 dressed crabs, white and brown meat separated<\/li>\n\n\n\n<li>4 leeks, finely sliced<\/li>\n\n\n\n<li>300g petit pois<\/li>\n\n\n\n<li>2 lemons<\/li>\n\n\n\n<li>225ml dry white wine<\/li>\n\n\n\n<li>125g butter<\/li>\n\n\n\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>sea salt<\/li>\n\n\n\n<li>black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--2 wp-block-paragraph\">Method<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the oven to <strong>180\u00b0C fan<\/strong>. Put the brill in a large roasting tin, season with salt and pepper and dot with <strong>25g butter<\/strong>. Pour <strong>75ml white wine<\/strong> around the fish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Roast for about <strong>20\u201325 minutes<\/strong>, depending on its size and thickness, basting once or twice with the buttery wine from the roasting tin. The fish is ready when the flesh comes easily away from the bone at the thickest part.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">While the brill cooks, heat the olive oil and <strong>50g butter<\/strong> in a large frying pan or wide saucepan. Add the leeks and cook gently for about <strong>5 minutes<\/strong>, until soft but not browned.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the remaining <strong>150ml white wine<\/strong> and simmer for 2\u20133 minutes. Stir in the <strong>brown crab meat<\/strong> and petit pois and cook for another 2\u20133 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reduce the heat and gently fold through the <strong>white crab meat<\/strong>, remaining <strong>50g butter<\/strong>, the finely grated zest of 1 lemon and a generous squeeze of lemon juice. Warm through without boiling and season with black pepper and a little salt if needed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the brill from the oven and spoon over some of its buttery roasting juices.
