{"id":90,"date":"2026-08-11T22:47:16","date_gmt":"2026-08-11T22:47:16","guid":{"rendered":"https:\/\/granary.food\/?p=90"},"modified":"2026-08-11T22:47:16","modified_gmt":"2026-08-11T22:47:16","slug":"monkfish-soup","status":"publish","type":"post","link":"https:\/\/granary.food\/?p=90","title":{"rendered":"Monkfish soup"},"content":{"rendered":"\n<p class=\"is-style-text-subtitle is-style-text-subtitle--1 wp-block-paragraph\">Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 monkfish tails, about 350g each (approximately 1.05kg total), <\/li>\n\n\n\n<li>2 x 400g tins chopped tomatoes<\/li>\n\n\n\n<li>1 x 400g tin cannellini beans, drained and rinsed<\/li>\n\n\n\n<li>325g fresh fish stock<\/li>\n\n\n\n<li>150g chicken stock1 large onion, diced<\/li>\n\n\n\n<li>4 garlic cloves, finely sliced<\/li>\n\n\n\n<li>125ml dry white wine1 lemon<\/li>\n\n\n\n<li>100g flat-leaf parsley, roughly chopped<\/li>\n\n\n\n<li>2 tbsp extra virgin olive oil<\/li>\n\n\n\n<li>25g butter<\/li>\n\n\n\n<li>generous pinch saffron<\/li>\n\n\n\n<li>2 bay leaves<\/li>\n\n\n\n<li>black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--2 wp-block-paragraph\">Method<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat half the olive oil in a large casserole or saucepan. Brown the monkfish over a medium-high heat for 1\u20132 minutes on each side, working in batches if necessary, then remove and set aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the remaining olive oil and onion and cook for about 4 minutes until softened. Add the garlic and saffron and cook for another minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour in the white wine and cook for 1\u20132 minutes, scraping up anything stuck to the bottom of the pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped tomatoes, fish stock, chicken stock, cannellini beans and bay leaves. Bring to the boil, reduce the heat and simmer uncovered for 20 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Return the monkfish to the pan and simmer gently for about 5\u20137 minutes, until just cooked through.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the bay leaves and stir through the butter and most of the parsley.
