{"id":86,"date":"2026-08-11T22:31:57","date_gmt":"2026-08-11T22:31:57","guid":{"rendered":"https:\/\/granary.food\/?p=86"},"modified":"2026-08-11T22:33:56","modified_gmt":"2026-08-11T22:33:56","slug":"paella","status":"publish","type":"post","link":"https:\/\/granary.food\/?p=86","title":{"rendered":"Paella"},"content":{"rendered":"\n<p class=\"is-style-text-subtitle is-style-text-subtitle--1 wp-block-paragraph\">Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>180g paella rice <strong>or 180g short-grain brown rice<\/strong><\/li>\n\n\n\n<li>160g boneless, skinless chicken thigh fillets (about half a standard 320g pack), cut into small pieces<\/li>\n\n\n\n<li>165g raw peeled king prawns (1 pack)<\/li>\n\n\n\n<li>250g skinless, boneless hake fillets (1 pack), cut into roughly 3cm pieces.  Monkfish tail or mussels better if available.<\/li>\n\n\n\n<li>325g fresh fish bone broth<\/li>\n\n\n\n<li>220g chicken stock<\/li>\n\n\n\n<li><strong>150ml boiling water if using brown rice<\/strong><\/li>\n\n\n\n<li>1 red pepper, finely chopped into half rings<\/li>\n\n\n\n<li>200g green beans (1 pack), cut into short lengths or 200g frozen peas<\/li>\n\n\n\n<li>1 \u00d7 400g tin butter beans, drained and rinsed<\/li>\n\n\n\n<li>2 medium tomatoes, diced<\/li>\n\n\n\n<li>2 garlic cloves, finely chopped<\/li>\n\n\n\n<li>1 lemon, cut into wedges<\/li>\n\n\n\n<li>small handful flat-leaf parsley, chopped<\/li>\n\n\n\n<li>1\u00bd tbsp extra-virgin olive oil<\/li>\n\n\n\n<li>1 tsp sweet Spanish paprika<\/li>\n\n\n\n<li>generous pinch saffron threads<\/li>\n\n\n\n<li>1 small rosemary sprig<\/li>\n\n\n\n<li>freshly ground black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--2 wp-block-paragraph\">Method<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. Brown the chicken<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the olive oil in a wide frying or paella pan over medium-high heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Brown the chicken for about <strong>4 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>White rice:<\/strong> leave the chicken in the pan.<br><strong>Brown rice:<\/strong> remove the chicken to a plate for now.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2. Cook the rice<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For WHITE paella rice:<\/strong> add the pepper and green beans and cook for 2 minutes. Add the tomatoes, garlic, paprika, saffron, rosemary and black pepper and cook for another 2 minutes. Stir in the rice and butter beans, then add the fish broth and chicken stock.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For BROWN rice:<\/strong> add the garlic and cook for 30 seconds. Add the rice, saffron, rosemary, fish broth, chicken stock and <strong>150ml boiling water<\/strong>. Cook for about <strong>20 minutes<\/strong>, then add the browned chicken, pepper, green beans, tomatoes, paprika and butter beans.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For either version, stir once after adding the liquid, bring to a simmer and then <strong>do not stir again<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Continue cooking uncovered until the rice is nearly tender:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>White rice:<\/strong> roughly another 12 minutes<\/li>\n\n\n\n<li><strong>Brown rice:<\/strong> roughly another 10\u201315 minutes after adding the chicken and vegetables; add a splash more boiling water if necessary<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">3. Add the seafood<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">When the rice is about <strong>5\u20136 minutes from being ready<\/strong>, arrange the hake and prawns over the top and press them lightly into the rice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Continue cooking without stirring until the rice is tender with a little bite, the seafood and chicken are cooked through, and virtually all the liquid has been absorbed.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">4. Finish<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">For a little <strong>socarrat<\/strong>, increase the heat for the final <strong>30\u201360 seconds<\/strong>, until the rice gently crackles underneath.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove from the heat and rest for <strong>3\u20135 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Scatter with parsley and serve with lemon wedges.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients Method 1.
