{"id":84,"date":"2026-08-11T21:51:39","date_gmt":"2026-08-11T21:51:39","guid":{"rendered":"https:\/\/granary.food\/?p=84"},"modified":"2026-08-11T21:51:39","modified_gmt":"2026-08-11T21:51:39","slug":"vegan-orange-and-almond-cake","status":"publish","type":"post","link":"https:\/\/granary.food\/?p=84","title":{"rendered":"Vegan orange and almond cake"},"content":{"rendered":"\n<p class=\"is-style-text-subtitle is-style-text-subtitle--1 wp-block-paragraph\">Ingredients<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cake<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>210 g self-raising flour<\/li>\n\n\n\n<li>50 g ground almonds<\/li>\n\n\n\n<li>1\u00bd teaspoons baking powder<\/li>\n\n\n\n<li>\u00bd teaspoon bicarbonate of soda<\/li>\n\n\n\n<li>\u00bc teaspoon fine salt<\/li>\n\n\n\n<li>65 g golden caster sugar<\/li>\n\n\n\n<li>Finely grated zest of <strong>3 oranges<\/strong><\/li>\n\n\n\n<li>Approximately 220\u2013250 g courgette, enough to give <strong>170 g after squeezing<\/strong><\/li>\n\n\n\n<li>70 g thick, unsweetened soya yoghurt<\/li>\n\n\n\n<li>60 ml light olive oil<\/li>\n\n\n\n<li>1 teaspoon vanilla extract<\/li>\n\n\n\n<li>1 teaspoon cider vinegar<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Orange drizzle<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>40 ml freshly squeezed orange juice<\/li>\n\n\n\n<li>15 g caster sugar<\/li>\n<\/ul>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--2 wp-block-paragraph\">Method<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. Prepare the oven and tin<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the oven to <strong>170\u00b0C fan<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lightly grease a <strong>20 cm round cake tin<\/strong> and line the base and sides with baking paper.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2. Prepare the courgette<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Coarsely grate approximately <strong>220\u2013250 g courgette<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put it into a clean tea towel and squeeze firmly over the sink to remove the excess water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Weigh the squeezed courgette.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You need exactly <strong>170 g<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Set it aside.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">3. Mix the dry ingredients<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Put the following into a large mixing bowl:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>210 g self-raising flour<\/li>\n\n\n\n<li>50 g ground almonds<\/li>\n\n\n\n<li>1\u00bd teaspoons baking powder<\/li>\n\n\n\n<li>\u00bd teaspoon bicarbonate of soda<\/li>\n\n\n\n<li>\u00bc teaspoon salt<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Stir together thoroughly with a whisk or fork.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">4. Prepare the orange mixture<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Put the <strong>65 g sugar<\/strong> into another large bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finely grate the zest of all <strong>3 oranges<\/strong> directly into the sugar, avoiding the white pith.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rub the zest and sugar together with your fingertips for about <strong>30 seconds<\/strong>, until the sugar smells strongly of orange.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>70 g soya yoghurt<\/li>\n\n\n\n<li>60 ml light olive oil<\/li>\n\n\n\n<li>1 teaspoon vanilla extract<\/li>\n\n\n\n<li>1 teaspoon cider vinegar<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Whisk until evenly combined.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">5. Make the batter<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the wet ingredients into the dry ingredients.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fold gently until most of the flour has disappeared.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the <strong>170 g squeezed courgette<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fold again just until everything is evenly mixed and there are no patches of dry flour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Do not beat the mixture or continue mixing once it is combined.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The batter should be thick and spoonable rather than runny.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">6. Bake<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Spoon the mixture into the prepared tin and smooth the top.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bake on the middle shelf for <strong>45 minutes without opening the oven<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After 45 minutes, put a thin skewer into the exact centre.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The cake is ready if the skewer comes out clean or with a few separate soft crumbs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If there is wet or sticky batter on the skewer, bake for another <strong>5 minutes<\/strong> and check again.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If necessary, continue baking in <strong>3-minute intervals<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The cake will normally take about <strong>45\u201352 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If the top becomes too dark, loosely place a sheet of foil over it.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">7. Make the orange drizzle<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">While the cake is baking, put:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>40 ml orange juice<\/li>\n\n\n\n<li>15 g caster sugar<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">into a small saucepan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Warm gently, stirring, just until the sugar dissolves.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove from the heat.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">8. Drizzle the cake<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Leave the cooked cake in its tin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prick the surface several times with a thin skewer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spoon one-third of the orange drizzle over the cake.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wait <strong>1 minute<\/strong>, add another third, wait another minute, then add the remainder.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">9. Cool<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Leave the cake in the tin for <strong>25 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Transfer it carefully to a cooling rack and allow it to cool completely before cutting.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">10.
