{"id":71,"date":"2026-07-03T10:12:24","date_gmt":"2026-07-03T10:12:24","guid":{"rendered":"https:\/\/granary.food\/?p=71"},"modified":"2026-07-03T10:12:24","modified_gmt":"2026-07-03T10:12:24","slug":"lebanese-mezze-recipes","status":"publish","type":"post","link":"https:\/\/granary.food\/?p=71","title":{"rendered":"Lebanese mezze recipes"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Recipes are set out below for:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Lebanese chicken kofta meatballs with roasted peppers &amp; courgettes <\/li>\n\n\n\n<li>Baharat roast lamb rump <\/li>\n\n\n\n<li>Sumac roasted cauliflower, chickpeas &amp; vegetables <\/li>\n\n\n\n<li>Lemon tahini butter beans <\/li>\n\n\n\n<li>Herby tabbouleh <\/li>\n\n\n\n<li>Quick pickled cucumber &amp; radish salad<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Lebanese Chicken Kofta Meatballs<\/h2>\n\n\n\n<h3 class=\"wp-block-heading is-style-text-subtitle is-style-text-subtitle--1\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>700 g chicken thigh meat<\/li>\n\n\n\n<li>1-2 eggs<\/li>\n\n\n\n<li>50 g fresh wholemeal breadcrumbs<\/li>\n\n\n\n<li>1 onion, finely grated and squeezed dry<\/li>\n\n\n\n<li>2 garlic cloves, grated<\/li>\n\n\n\n<li>30 g parsley, chopped<\/li>\n\n\n\n<li>15 g mint, chopped<\/li>\n\n\n\n<li>15 g coriander, chopped<\/li>\n\n\n\n<li>1.5 tsp ground cumin<\/li>\n\n\n\n<li>1.5 tsp ground coriander<\/li>\n\n\n\n<li>\u00bd tsp cinnamon<\/li>\n\n\n\n<li>\u00bd tsp allspice<\/li>\n\n\n\n<li>1.5 tsp sumac<\/li>\n\n\n\n<li>zest of 2 lemons<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Blend the meatball ingredients and form <strong>18\u201320 meatballs<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bake at <strong>220\u00b0C fan<\/strong> for <strong>20\u201325 minutes<\/strong> until the meatballs reach <strong>75\u00b0C<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading is-style-default\">Baharat Roast Lamb Rump<\/h2>\n\n\n\n<h3 class=\"wp-block-heading is-style-text-subtitle is-style-text-subtitle--2\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>900 g lamb rump<\/li>\n<\/ul>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--3 wp-block-paragraph\">Marinade:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>3 garlic cloves, grated<\/li>\n\n\n\n<li>2 tsp baharat<\/li>\n\n\n\n<li>1 tsp cumin<\/li>\n\n\n\n<li>1 tsp ground coriander<\/li>\n\n\n\n<li>1 tsp smoked paprika<\/li>\n\n\n\n<li>zest of 1 lemon<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Roast beside the meatballs for <strong>25\u201330 minutes<\/strong> until <strong>54\u201356\u00b0C<\/strong> internally.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rest for <strong>15 minutes<\/strong> before slicing thinly.  Present in the centre of the dish containing the tahini butter beans (using these as a garnish)- see recipe below.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sprinkle with:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>parsley<\/li>\n\n\n\n<li>mint<\/li>\n\n\n\n<li>sumac<\/li>\n\n\n\n<li>pomegranate seeds<\/li>\n\n\n\n<li>toasted pistachios<\/li>\n\n\n\n<li>feta<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading is-style-default\">Lemon Tahini Butter Beans<\/h2>\n\n\n\n<h3 class=\"wp-block-heading is-style-text-subtitle is-style-text-subtitle--4\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 \u00d7 400 g tins butter beans, drained<\/li>\n\n\n\n<li>3 tbsp tahini<\/li>\n\n\n\n<li>juice of 1 lemon<\/li>\n\n\n\n<li>1 garlic clove, crushed<\/li>\n\n\n\n<li>2 tbsp extra virgin olive oil<\/li>\n\n\n\n<li>2 tbsp chopped parsley<\/li>\n\n\n\n<li>\u00bd tsp cumin<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Warm the beans gently for a few minutes, then stir through the remaining ingredients.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pickled cucumber, radish and carrot salad<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cucumber, thinly sliced<\/li>\n\n\n\n<li>8 radishes, sliced<\/li>\n\n\n\n<li>2 carrots, sliced into thin fingers<\/li>\n\n\n\n<li>150 ml apple cider vinegar<\/li>\n\n\n\n<li>100 ml water<\/li>\n\n\n\n<li>1 tbsp honey<\/li>\n\n\n\n<li>1 tsp mustard seeds<\/li>\n\n\n\n<li>handful chopped dill<\/li>\n\n\n\n<li>Optional &#8211; grated fennel<\/li>\n\n\n\n<li>Optional &#8211; finely sliced little gem lettuce<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Mix everything (except for fennel and lettuce, if using) together and leave for at least <strong>30 minutes<\/strong>.  Drain liquid away and mix in grated fennel, if using, then lay on a thick bed of lettuce.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tabbouleh<\/h2>\n\n\n\n<h3 class=\"wp-block-heading is-style-text-subtitle is-style-text-subtitle--5\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g bulgur wheat<\/li>\n\n\n\n<li>250 ml boiling water<\/li>\n\n\n\n<li>3 tomatoes, diced<\/li>\n\n\n\n<li>\u00bd cucumber, diced<\/li>\n\n\n\n<li>4 spring onions, sliced<\/li>\n\n\n\n<li>60 g parsley, chopped<\/li>\n\n\n\n<li>20 g mint, chopped<\/li>\n\n\n\n<li>zest and juice of 1 lemon<\/li>\n\n\n\n<li>3 tbsp extra virgin olive oil<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Cover the bulgur with boiling water for about <strong>15 minutes<\/strong>, then fluff with a fork and mix through the remaining ingredients.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sumac Roasted Cauliflower, Vegetables &amp; Chickpeas<\/h2>\n\n\n\n<h2 class=\"wp-block-heading is-style-text-subtitle is-style-text-subtitle--6\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 large cauliflower, chopped into florets<\/li>\n\n\n\n<li>2 \u00d7 400 g tins chickpeas, drained<\/li>\n\n\n\n<li>2 aubergines, cubed<\/li>\n\n\n\n<li>2 red peppers, sliced<\/li>\n\n\n\n<li>3 courgettes<\/li>\n\n\n\n<li>1 red onion, wedges<\/li>\n\n\n\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>1 tsp cumin<\/li>\n\n\n\n<li>1 tsp ground coriander<\/li>\n\n\n\n<li>1 tsp smoked paprika<\/li>\n\n\n\n<li>1 tsp sumac<\/li>\n\n\n\n<li>salt and pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Roast at <strong>220\u00b0C fan<\/strong> for <strong>30\u201335 minutes<\/strong>, turning once.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finish with:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>parsley<\/li>\n\n\n\n<li>lemon juice<\/li>\n\n\n\n<li>toasted almonds<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Recipes are set out below for: Lebanese Chicken Kofta Meatballs Ingredients Blend the meatball ingredients and form 18\u201320 meatballs.
