{"id":41,"date":"2026-06-26T15:05:12","date_gmt":"2026-06-26T15:05:12","guid":{"rendered":"https:\/\/granary.food\/?p=41"},"modified":"2026-06-27T14:40:29","modified_gmt":"2026-06-27T14:40:29","slug":"korean-pork-casserole","status":"publish","type":"post","link":"https:\/\/granary.food\/?p=41","title":{"rendered":"Korean pork casserole"},"content":{"rendered":"\n<p class=\"is-style-text-subtitle is-style-text-subtitle--1 wp-block-paragraph\">Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500g pork tenderloin, sliced thinly (can be replaced with tempeh, in which case see below)<\/li>\n\n\n\n<li>350g fresh (live) kimchi<\/li>\n\n\n\n<li>1 small onion (diced)<\/li>\n\n\n\n<li>4 garlic cloves (finely minced)<\/li>\n\n\n\n<li>2 inch ginger (finely minced)<\/li>\n\n\n\n<li>2 heaped teaspoons of white miso paste<\/li>\n\n\n\n<li>1 large sheet of dried kelp<\/li>\n\n\n\n<li>800ml water<\/li>\n\n\n\n<li>1 firm block of tofu (cut into large cubes)<\/li>\n\n\n\n<li>2 courgettes, sliced into thick rings<\/li>\n\n\n\n<li>4 large carrots, sliced into thin rings<\/li>\n\n\n\n<li>Broccoli, sliced thinly<\/li>\n\n\n\n<li>Box shitake mushrooms, stalks removed and sliced thickly<\/li>\n\n\n\n<li>150g frozen edamame beans<\/li>\n\n\n\n<li>2 spring onions<\/li>\n\n\n\n<li>1 tsp sesame oil<\/li>\n\n\n\n<li>2 tsp your preferred chilli paste (to taste &#8211; we add much less if children will be eating)<\/li>\n\n\n\n<li>40g Buckwheat soba noodles or edame \/ black bean noodles.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Quantities serve two adults and a young child.<\/em><\/p>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--2 wp-block-paragraph\">Method<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat up a cast iron casserole dish, add olive oil, ginger and garlic, and fry on a medium heat until aromatic.   Add onion and fry until soft and starting to turn golden.  Add pork and kimchi, and fry until pork is cooked.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add water, miso paste, kelp, carrot, and simmer for 30 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add edamame beans, courgette, broccoli, tofu and shitake mushrooms and simmer for further 10 minutes.  Boil water in a separate saucepan to cook noodles, and add noodles once boiling (then cook in accordance with instructions).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove kelp and discard.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stir in sesame oil, spring onion and chilli paste then serve immediately.<\/p>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--3 wp-block-paragraph\">If using tempeh:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slice the tempeh thinly, and simmer gently in a separate pan in water for ten minutes.
